It was most certainly difficult to give up pizza in our new lifestyle. I was no cook and it looked and felt like an enormous task to cook just right. Some recipes can be intimidating, to say the least.
I tested and tried many recipes before I threw caution to the wind and just did what made sense. With a few interchangeable ingredients and an open mind to try new things, you too can find your own way to make the perfect pizza. Here’s how I do it.

Coach Ilze’s Best pizza ever. No-fuss base
- 2 big hand full grated cheddar
- 1 handfull grated mozzarella
- 1 tbsp Parmesan powder
- 2 eggs
- Italian herbs
- 2 tbsp coconut flour
- 2 tbsp yogurt
Mix all together and spread out on an extra-large baking pan covered with baking paper. You must use baking paper or it will stick. NOTE baking paper, not rice paper or wax paper, they will stick. Keep spreading, you’ll get used to how to do it. I use a silicone spatula. Bake on 180C for 10-15 min, or till golden. Option to turn and bake for another 5 min for a firmer base.
Take out and cool for about 5 min. Add toppings and bake till top cheese is melted.
Tomato spread first- tomato paste mixed with garlic. 2/3 covered with sliced small tomatoes, cooked ham (not processed stuff), salami, green pepper, mushrooms and mozzarella.
The whole lot makes 6 servings, so we breakfast on the rest.
Swap out the mozzarella for white cheese or just use cheddar for the full recipe. The Parmesan cheese helps with the flavour so you don’t really need it. Yogurt can be replaced with cottage cheese or cream cheese. They help puff up the base slightly.
